Bell peppers can vary in color from green, red, yellow, orange and more rarely, white, rainbow (between stages of ripening) and purple, depending on when they are harvested. Green peppers are less sweet and slightly more bitter than red, yellow or orange peppers. Bell peppers can be sliced and eaten raw or mixed into many different types of recipes, such as stir-fry dishes or casseroles.
