Cranberries come from evergreen dwarf shrubs or trailing vines that grow in bogs or marshes. The smooth oval berries turn a vibrant red when fully ripe and have a tart, tangy flavor. They are traditionally sweetened when cooked or dried to balance the natural tartness of the berry. Although fresh cranberries are best known for their use in the Thanksgiving staple — cranberry sauce — they are also used in baking, holiday decorating and festive cocktails.
